Greyface ewes, a traditional North of England breed are crossed with Suffolk rams to produce large, blackfaced lambs.

Most of our sheep lamb at the beginning of April when the days are becoming longer and warmer. By the first week of May the lambs are big enough to go with their mothers to the saltmarsh, where the short, springy, sea-washed grasses provide excellent, extensive grazing. Here the lambs grow naturally over the summer months and develop the superb, characteristic flavour, succulence and tenderness of Waterblean saltmarsh lamb.

Our first lambs of the season are usually available in early August.
